I notice one of my guinea pigs couldnt really eat a carrot so i checked her tooth and it seem really long so i took her to the vet and they trimmed it. the vet also looked at my other guinea pig and said her teeth were looking alittle long but not bad so she trimmed her teeth too. Now it seems like they are having a hard time chewing foods they use to chew really well. So does this mean the vet maybe cut them too short and if so will it grow back quickly so they can chew on food better

How short did the vet clip their teeth? Its very unusual and in my 10plus years of keeping pigs, non have ever needed their teeth clipped. Sometimes they do need their teeth done but in rare cases.
Do you have a picture of their teeth? (may be difficult to get a snap)

I hope you sort this, I had a guinea who broke her leg and her teeth keep breaking, but I left her too it and her teeth are now fine and she's eating well, I did notice food intake was a little slow but after 2 weeks she was back to munching normally

Could their teeth be extra sensitive after the clipping?
