Charmeleon (formerly Ginny) is getting me all kinds of worried. Since getting her six, almost seven days ago, she has not touched her pellets at all. She occasionally nibbles on a tiny piece of lettuce, maybe celery- I did find that she loves her cucumber at least... She barely drinks, either. Elsewhere, I was told that it was just stress of being rehomed, but I wanted a second opinion. I feel like she might be acting stubborn, wanting to hold out for the sugary food and canned veggies that she used to get, but there's no way I'm feeding her that stuff. I've also noticed that she ONLY eats veg out of my hand, so I'm trying out some new bowls. The only plus is that she's still scarfing down her hay like a champ. :/ Look at her big ol' butt.

She sounds spoiled. Keep offering her new veggies sometimes it takes a few tries before they will eat. as for the pellets keep offering them also. My Terra is spoiled and I have to mix my pellets(two different brands because he prefers one brand so I have to disguise the other brand (which is better for him).It will take time and patience but she will come around.

Firstly is she eating hay? Are her teeth ok?
Go back to basics, Hay hay and more hay, grass and weeds too.
Keep the veggies simple, slice/chop 3/4 different veggies up in a bowl and leave them for a few hours. I mix all my veg up so the pigs have to rummage about for the good bits. Dont fuss too much.
